Ok here's a question for ya. I recently built a box for the board, installed Windows 7 x64, will I be able to run the old door games
locally without issue? I know with Windows 10 x64 it was a no go...
just curious on windows 7.

Nope. Any of the 64bit Windows systems will not support 16bit
applications anymore. You would have to run the 32bit version of Windows 7.

Doors via DOSEMU and that's worked reasonably well for me for the most part. (Not running *many* doors atm. But the ones I do run seem to be working well).

Nope. Any of the 64bit Windows systems will not support 16bit applications anymore. You would have to run the 32bit version of Wind 7.

DOSEMU only runs on Linux. Yes, DOSBox will work on Linux and Win64, and
I
have read there are issues, as it doesn't support file sharing.

Yes, it should be in the readme.
You can use Visual Studio 2015 and open the Solution named: ./visualc_net/dosbox.sln
