    I've seen it both ways.. Most people spell it cardoons I think.

    They're two separate but related vegetables. Cardoons are thistles,
    related to artichokes, with edible stems. They are also called
    artichoke thistles and globe artichokes.

    Gardoons are burdock, also a thistle with edible stems (and roots)
    and really sticky, prickly burrs.

    Tonight's green veg was Shanghai bok choy in a turkey and rice
    soup. (We had roasted a 22 pound turkey on Saturday which got
    chopped into small portions and froze most of them.)
