You can also make potato soup, topping for a
casserole, etc, or kix it with cooked cabbage,
kale, or collards to make colcannon.

I like your wife's idea but myself would coat
the outside with the flour instead of mixing it
all through, because I'd prefer a potato cake
rather than a potato pancake.

you need the cereal because it provides the crunch.

2 c Leftover Mashed Potatoes
Butter
Crushed Cornflakes

Roll the potatoes into balls and flatten them. Dip them in Melted
butter. Roll them in crushed cornflakes. Place them in a greased
pan. Bake the balls until they are well heated.
